6 Healthy Lunch Ideas that the Kids Will Love

Whether you’re keeping the kids healthy at home or packing a lunch that they’ll actually enjoy eating, these easy meals and snacks are the perfect antidote to junk food so your kids can stay happy and healthy, and have tons of energy to get them through the day.

1. Ham and Egg Wraps

These fun roll ups are the perfect lunch treat for hungry school kids. The addition of celery helps balance out the lunchtime meal.
What you’ll need:

  • 2 hard-boiled eggs
  • 60g lean leg ham
  • 1 tbsp of mayonnaise
  • 2 mountain bread or tortilla
  • A celery stalk cut thinly
  • ¾ cup baby spinach leaves

Preparation instructions:

  1. Mash the eggs, mustard and mayonnaise in a bowl.
  2. Spread margarine on flatbread
  3. Lay ham across bottom third of flatbread
  4. Lay egg mix, celery and spinach across the ham.
  5. Wrap rolls with cling wrap or greaseproof paper
  6. Refrigerate for minimum 1 hour (can be refrigerated overnight)
  7. Remove wrapping and cut into 4 for serving

2. Sultana Bran Bars

A healthy snack that’s ideal as a recess treat, you’ll also love them for after school. Tasty and healthy for the whole family.
What you’ll need:

  • ? cup golden syrup
  • 3 ½ cups Sultana Bran
  • 2 lightly beaten eggs
  • ? cup flour (plain)
  • ½ cup finely chopped dried apricots
  • ½ cup brown sugar
  • 130 grams low fat margarine

Preparation instructions:

  1. Preheat oven to 180C (or 160C for fan-forced)
  2. Grease rectangular pan and line base and long sides with baking paper
  3. Combine sugar, margarine and syrup in saucepan and stir until margarine melts
  4. Add remaining ingredients until mixture is well combined
  5. Spread mixture evenly in pan
  6. Bake mixture uncovered for 30 minutes or until browned and firm to the touch
  7. Allow to cool in pan before cutting into squares

3. Kale Chips

Healthy, fun and easy to make, kale chips are the healthy alternative over potato chips that still give kids the ‘crunch’ they want with a lunchtime snack.
What you’ll need:

  • Kale (bunch)
  • 3 tbs of olive oil
  • Salt
  • Cumin
  • Paprika

Preparation instructions:

  1. Preheat oven to 200C
  2. Line a baking tray with baking powder
  3. Wash kale and separate leaves, discarding stems, tear leaves into bit-sized portions.
  4. Use a salad spinner to remove excess water from kale
  5. Toss kale in a bowl with olive oil, salt, cumin and paprika
  6. Place onto baking tray and cook for 7-10 minutes

Note: If your little one isn’t a fan of spices, remove cumin and paprika from ingredients.

4. Rice noodle salad

Crisp, crunchy and healthy, use fresh ingredients to give this fun school lunch a tasty kick.
What you’ll need:

  • 1 cucumber (small) sliced into wedges
  • Handful sprouts
  • Handful of trimmed snow peas
  • A carrot, julienned
  • 1 cup of cooked rice noodles, cut into lengths.

Dressing:

  • 40mls fish sauce
  • 60mls lime juice
  • 2 tbsp caster sugar
  • 1 garlic clove, crushed

Preparation instructions:

  1. Taking a large bowl, combine all the salad ingredients together
  2. In a separate bowl, combine dressing ingredients
  3. Pack salad into lunchboxes
  4. Pack dressing with lunches, but keep in separate container to prevent veggies becoming soggy.

Note: Ingredients for this recipe can be easily substituted depending on your child’s taste.

5. Lamb Pitas

Easy and tasty lunch for the kids, these nutritious pitas can be whipped up the night before to make it easier for you in the morning.
What you’ll need:

  • 400g lamb mince
  • 1 onion (brown, grated)
  • 1 tsp ground cumin
  • ½ tsp ground cinnamon
  • 2 tbsps flat leaf parsley, fresh and finely chopped
  • 2 tbsps dried breadcrumbs
  • 4 pita pockets (wholemeal, halved crossways)
  • 180g salad leaves
  • Diced cucumber
  • Diced tomato
  • 200g greek yoghurt

Preparation instructions:

  1. Preheat oven to 200C
  2. Line an oven-safe tray with baking paper
  3. Combine mince, onion, breadcrumbs, parsley, cinnamon and cumin into a bowl.
  4. Season with desired amount of salt and pepper
  5. Scoop single tablespoons of the mixture and shape into balls
  6. Place balls on baking tray and bake for 15 minutes or until cooked through
  7. Put meatballs and salad leaves in pitas. Store overnight. Add yoghurt in the morning.

6. Muesli Balls with Honey

Sweet and tasty snack for kids with all the right ingredients for a fun recess or after lunch treat.
What you’ll need:

  • A cup of prunes (pitted)
  • ¼ cup honey
  • 2 and ½ cups of toasted muesli (nut free to be compliant with school rules).
  • ¼ tsp spice mix
  • 50g butter

Preparation instructions:

  1. Melt and cool the butter
  2. Mix with 2 cups of the muesli and other ingredients and churn in food processor until combined
  3. Line baking tray with baking paper
  4. Lay remaining muesli on plate or flat surface
  5. Roll mixture into balls, then coat balls in dry muesli
  6. Place balls on baking tray
  7. Refrigerate for approx 30 minutes
  8. Once firm, store balls in airtight container until serving.
